Autumn Butternut Squash Chunks

Level: Easy
Ingredients:
- 1 tablesppon olive oil
- 10 oz butternut squash, chunks (also sold in already cut up chunks at Trader Joes)
- 2 Tbls. brown sugar
- 1/8 tsp cinnamon
Directions:
- Heat oil in a medium skillet over medium-high for about 1 minute
- Add butternut squash, brown sugar and cinnamon
- Lower the heat to medium low and cook about 8-10 minutes or until tender
- Insert tookpicks and serve
Easy Cheesy Pretzel Sticks
This is a health snack that kids really love and can help make. I was surprised at how many young kids loved them first time. Havarti Cheese is the secret.
Ingredients:
- Pretzel Sticks
- Brick of Havarti Cheese
- Cherry Tomatoes
Directions:
Cut Havarti cheese brick into 9, 1/4 inch slices, then cute each slice into 9 cubes.
Slide one cherry tomato and one chese cube on a pretzel stick.
Taste. Really Really good!
Frozen Grapes
OK it doesn't get any simpler than this. But try them once and you may end up having a zip lock bag of grapes in your freezer at all times. For some reason, they taste sweeter when frozen and are far healthier than anything processed .
Ingredients:
- Red Seedless Grapes
Directions:
Wash grapes well and place in a zip lock bag. Freeze for at least 24 hours. Yum. Great on a hot day.
